1 16 oz pkg large white lima beans
1 medium onion, quartered or whole
1 or 2 smoked turkey wings
2 or 3 tablespoons of olive oil or butter
salt to taste
Rinse beans, place in dutch oven/similar size pot that is about 1/2 full of water…peel onion, place in pot…you can cut it up if desired, my boys won’t eat it if it has pieces of onion, so I leave it whole and it just gives the oniony flavor…salt, and pepper…. Place turkey wings on top. Let come to boil on medium heat, lower to barely simmer, cover, let cook for 2 hours….taste test to see when beans are tender and ready…and the “gravy” has thickened a bit.
Serve beans over rice with cornbread on the side, and sweet iced tea.
