Abundance...

Fresh tomatoes from my mother and step father...

Fresh corn - buttered and seasoned with sea salt, and ready for the oven. Cover in foil and bake for 30 minutes @350 degrees. Or wrap individually with foil and place on the grill for about 20-25 minutes.

Prepared for the freezer. Wash, trim ends, place in freezer bag and "freeze"...Simple as that!

Southwestern Corn Casserole
1 can whole kernal corn
1 can cream corn
1/2 can French Onion Dip {or you can use sour cream or cream cheese}
1 cup shredded cheddar cheese
1 egg
2 T. sliced jalapeno
Mix all together in bowl and pour into greased baking dish. Bake for 45 minutes @ 400 degrees.
